I am interpreting this literally, as Christmas music rather than Yule music. (Deck the Halls is a Yule carol. It says so right in the lyrics. Ergo, no Deck the Halls and no Yule filk.)
Therefore, two versions of the Gaudete Carol: one formal choral version, and the Steeleye Span version. (The most fun part of the carol? Listening for where they sing Church Latin and where it gets Anglicized all to hell. Not that I'm complaining; the Gael in me thinks that's actually pretty funny. And apparently it was written in a Germanic localization of Latin anyway, so Church Latin isn't right either.)
Then there's Straight No Chaser's Twelve Days of Christmas . . .
